For Dark Heart Imperial Stout, the beer has a big and punchy robustness coming from the Regalo and Mana cacao nibs. I like the freshness of the ingredients right when we used them in the R&D system, and they both have their own uniqueness. In the main brewing, we've added them in the hot side, both mashing and kettle to get some serious flavor contribution. It's something I haven't done in this quantity, just kilos and kilos of cacao nibs we've used, and it's so exciting to use together with a lot of malt and other ingredients.

The character of the chocolate is really coming through in the aroma and flavor profile, but without being overly sweet, which is what many might expect in milk chocolate. Despite its high ABV, it should be very enjoyable, as it is our beer offering for the festive season.
